My gorgeous girlfriend Amanda McHale - Chef at one of our premier wineries: Darlington Estate dropped over with her 3 great kids: Charlotte, Emma & Joseph yesterday ... it's been a long time since we've caught up .. gotta take advantage of these school holidays * grins * ...
So I thought I'd prepare some homemade & baked food .. make it entertaining & a learning experience also for the kids ... win/win situation ... so before they arrived for lunch - I got the first batch ready: Bacon & Cheese Scrolls ... and allowed them to PROOF (takes about 1.5-2hrs as weather was so cool)
the dough which was prepared with the assistance of my Sunbeam bread maker, covered with tomato paste, diced Watsonia bacon & COON Tasty Cheese - all the way to the edges ... rolled up ...
Then cut into 20mm thickness (about 3/4" ) with smooth edge knife ...
Placed onto baking tray lined with baking/silicon paper ... then spritzed with water lightly, covered with cloth (I used clean pillowcase) and put into warm place to PROOF ...
By the time they had PROOFed - they had doubled in size (much to Joseph's delight) and were ready to put into the fan forced oven at 180C for 20-25mins ...
Meanwhile ... I showed them all how to make home made meat pies.. using the SUNBEAM Pie Maker (4 Hole) ... Joseph got to go hands and he did a grreeatt job too!!
The bottom of the pastry is: Borg's Shortcrust Pasty and the top is Borg's Puff Pastry. A "V" is simply cut into the pastry top - to allow steam to escape ...
The contents was 1kg of mince pork (or your choice of meat), diced onions, 2pkts of Maggi Meat Gravy Mix & 2tsps potato starch (or cornflour) to thicken it ... very yummy indeed ... the result?
(Note Deslie: - see that mustard cloth - it's old pillowcases that Oma passed on to us - single sheets & pillowcases that her sons used whilst growing up .. sons are 46 - 50yo now.. and the sheets/pillow cases are still going good.. amazing huh? lols)
Then whilst we had lunch - I did a 2nd batch - using Vegemite/cheesymite and Tasty cheese ... for Tertius when he gets back from after work and his next days lunch (lucky there was some left!!!)
After (only 5 left by time I got the camera! lol)
There you go .. that's me sharing our baking day yesterday ... sharing food & good times.. one of my favourite activites :)) ... So nice to see you again, Amanda ...

Recipe for the Bacon & Cheese Scrolls1.5 tsps Instant Dry yeast
500g All About Bread Supersoft/Hi Fibre or Crusty White flour
approx 290ml of water
Filling of choice: mine was 500gm diced bacon
Grated cheese (approx 200gm)
Tomato Paste
1. Put yeast, flour & water into breadmaker - switch on to knead, when stops (approx 20mins) pull dough out ... knead lightly and wrap into cloth (mine was clean pillowcase) and allow to sit for 20mins
2. Pull dough out, knead then roll out into large retangle
3. Spread tomato paste, sprinkle dice bacon and cheese
4. Roll up, slice then place onto pre-lined baking tray with baking paper
5. Bake in Fan Forced oven at 180C for about 20-25mins (til golden brown)
Note: All About Bread make their own mixes and it's sold all over Australia (not sure about NZ) ... Raeleen and I used to go and attend Elisabeth Stanley's breadmaking classes at their Greenwood store ... and it all started coz her daughter Chandra who has ANGELMAN SYNDROME needed special dietary needs ...
If you are passionate about making bread - her book called " All About Bread " is a great purchase for A$30 ... wire bound so it opens flat ... is one of the best investments I've ever purchased .. one of the few cookbooks I use regularly (ignore the messy smudges) ... great family business ... both Lis and Chris greet me by name.. feels like coming home ... highly recommend them .. they won't sell anything they've not tried & tested - and they have a wide variety of GLUTEN FREE products too ...
