Really felt like LEMON MERINGUE PIE tonight... so ... after a quick jaunt to IGA (and bumping into Pam * waves *) ... made it whilst watching some animal rescue TV programme * grins *
Sprayed the flan dish with Canola oil and used 1 and 2/3rd sheets of SHORTCRUST PASTRY and pricked the base with fork
Lined the pastry with GLADBAKE paper and poured BLACK EYED BEANS (RAW) over it to blind bake - if you're rich you can buy them fancy ceramic marbles - but this does the job * grins * ... and any beans will do - chickpeas etc .. as long as it's a decent size - don't use lentil lols... I have used rice but wouldn't recommend that either ...
Doesn't take long for the pastry to cook ... remove the GLADBAKE sheet carefully and I recycle the beans in a Tuupperware container ...
I was amazed how the lemon juice " cooked " the egg mixture/custard .. tasted oh so good lols... but tipping the flan dish about I spread the custard evenly without using the wooden spon ..
Was oh so nervous about the Meringue bit coz I always have problems with egg whites .. grrr but it went ok ... phews... (note: next time round - I'd use less sugar.. it was waayyy too sweet .. maybe 1/4 cup sugar lols)
Into the preheated oven to 230C then turned down to 150C for not long at all .. 5-10mins if at all .. the top of the meringue turned a goldenish brown ... then you know take it out carefully.. HOT hot hot...
Lemon Meringue Pie
Famous recipe from great friend: Judy Rogers, Alexander Heights, W. Australia.
400gms sweetened condensed milk
3 eggs, separated
2-3 lemons: ½ cup juice, lemon zest
½ cup caster sugar
Freezer short crust pastry
- Combine the 3 egg yolks, the condensed milk, lemon zest and the lemon juice. The mixture will thicken because the acid cooks the egg yolks (custard).
- Prebake the short crust pastry in 180 degrees Celcius
- Make meringue with the 3 egg whites, beating it to soft peak stage and after that slowly add the caster sugar, spoon by spoon.
- When the pie is pre-baked, fill it with lemon filling and top it with the meringue, bake it on 150C degrees to 5-10minutes, until the meringue start to be firm and coloured.

Note: I also fold up the GLADBAKE sheet, insert it along with the beans into the Tupperware container ... is very handy.. believe me!!
